RECIPE #2 Rabbit Fricassee

So before you all turn up your nose and are like I cant rabbit, I recommend that you try this recipe for you and some close friends or for someone special. This is a very easy recipe to following. You can find the rabbit at a local butcher or at one of your local farms ( Crying Rock Farms, Orting Wa).


2 cups red wine
2 tbs. lemon juice
2 bay leaves
1 tsp. thyme
¼ tsp. marjoram
Salt and Pepper
1 tsp. garlic powder
2 rabbits, cut into serving pieces
2 tbs. olive oil
1 onion, chopped
2 cloves garlic, minced
2 tbs. cornstarch



Mix wine, lemon juice, bay leaves, thyme, marjoram, salt, pepper and garlic powder to make marinade.  Place rabbit in large baking dish and pour marinade over rabbit. Cover and refrigerate overnight.  Remove rabbit from marinade when ready to cook and dry well.  Strain marinade and save. Heat oil in a large skillet.  Sauté onions and garlic. Cover and simmer 1-1 ½  hours or until tender.  Servings: 6-8


I also recommend that you have a good bottle of Pinot Noir with this recipe

Chocolate Covered Bacon!!! YUMMIE!!!!!!!!!!

Since I am on the subject of bacon I thought I would share this amazing, mouth watering, explosion of flavors recipe with you all. This is will make you taste buds go off like fireworks on the 4TH of July.

Recipe 6-8 pieces

6-8 Pieces center cut 1-2 in thick organic (or not) bacon
12 oz(ounces) Good and I mean Good Semisweet Chocolate (Godiva)
1/2 tbsp Chilli Powder

Directions
  1. Preheat the oven to 375°F.
  2. Place the bacon on a baking sheet lined with parchment paper. Bake in the oven, until bacon is cooked to your liking. ( LIKE CRISPY BARK)  20 minutes for soft bacon, 25 minutes for crispy bacon.
  3. Let bacon cool on the parchment paper for 5 minutes then transfer to a plate lined with paper towels.
  4. Meanwhile set up a double boiler. Heat a large saucepan filled with water over high heat until boiling. Reduce heat to a simmer.
  5. Set a heat-proof bowl over the simmering water. Add the chocolate chips and stir with a fork until smooth and completely melted then add Chilli Powder( less or more to taste)
  6. Cover another baking sheet with parchment paper.
  7. Using tongs, carefully dip the bacon into the melted chocolate turning to coat all sides in chocolate. Transfer to the clean sheet of waiting parchment paper. Repeat with remaining slices of bacon.
  8. Drizzle with the white chocolate, if desired.
  9. Refrigerate until chocolate is hard.
  10. Once cool, enjoy!

Organic Pigs or Not!!!

So I had the great pleasure of meeting an organic farmer that is raising pigs, chickens, rabbits and eggs on an organic farm, so that would also mean that his product's will be organic. Just living outside of the Seattle Area, what is the market for organic and are you willing to pay the higher prices for a better product. I think having the benefit of organic raised animals compared to being raised by some company that could care less about there product and just how fat their pockets get is great. I would like to call out to any Chef/Restauranteer to give this local farmer a try and to let me know what you think of his product. He can me found at Pikes Market on the weekends and goes by the name Crying Rock Farm.
This is my first post and I hope that it gets some traffic as I will be adding to this blog on a weekly basis.
